Healthy Recipe: Snack-Sized Guacamole

    Just a few days ago, I was at the mall with my mom and sister. We started to get hungry and talked about lunch. I mentioned that if they just wanted a snack, I had an apple in my purse.  My sister added that she had 3 pickles in hers and my mom chimed in that we could go out for lunch because she had packed 2 Tbsp. of her favorite dressing in a small Tupperware for when she ordered a salad.  Saying this out loud, we sound absolutely ridiculous, but the truth is, in order to eat a healthy diet, you have to plan ahead. So many foods are eaten as snacks throughout the day and we never realize the caloric load that we are consuming! A handful of chips here and a few bites of a candy bar there add up to major obstacles in our healthy eating goals; however, snacking is a great way to keep you full and throughout the day and prevent overeating in the evening.  This guacamole is a perfect snack for one and is made at home in just 5 minutes. 
 
½ of a medium avocado
1 Tbsp. finely chopped red onion
3 cherry tomatoes, finely chopped
1 tsp. lemon juice 
½ tsp. minced garlic
Pepper to taste 
 
    In a small bowl, mash the avocado, toss in the other ingredients and mix well. Pepper to taste. Serve alongside 15 multi-grain crisp crackers (15 crackers are only 70 kcal) for a filling snack.  This can be made ahead and stored in the refrigerator in small Tupperware for an easy grab-and-go snack on busy days or as a mayonnaise replacement on sandwiches and burgers.
