Healthy Recipe: Microwave Apple Cobbler

    I love fall: cooler weather, the start of the holiday season and a return to cozy and comforting homemade meals. Unfortunately, sometimes those comforting, cozy meals are full of unnecessary fat, sugar and calories that aid in the dreaded “holiday gain” occurring in the average population this time of the year. The good news is that small changes can make big differences! And while it is hard to “kick-start” a diet change while being bombarded with Halloween candy and flavored-lattes, it is possible to maintain and not gain throughout the season. Do this by prioritizing what is worth it and what is better to just pass by. For instance, make this refined-sugar free apple cobbler when you’re craving a sweet treat during the week and savor a piece of Chocolate Pie that your Grandma made!  Serves 2
– 2 Tbsp. Molasses, Cane Syrup, Honey or 
Agave Nectar
– 1 tsp. Vanilla Extract
– ½ tsp. Cinnamon
– 1 medium-large apple
– 3 Tbsp. No Sugar Added Applesauce 
– 3 Tbsp. Oatmeal
– Additional cinnamon (optional)
    In a small microwave-safe casserole dish or bowl, whisk together syrup, vanilla extract and cinnamon. Set aside. Core and chop apple into ½ inch pieces. Mix into syrup mixture and microwave 1 minute. Remove and stir mixture. Microwave 30 seconds more. In another small bowl or dish, mix applesauce and oatmeal. Add an extra dash of cinnamon if desired. Spread dough atop apple filling and spread around to cover apples. Microwave 1 ½ – 2 minutes, or until dough rises a bit and apple filling slightly bubbles. Let cool a few minutes and serve!
