Healthy Recipe: Salmon Cakes

    I’ve had two Conqueror Classes so far and I cannot explain how much I love them! I feel so honored and privileged to be able to do what I do. To me, being a Personal Trainer isn’t about “whipping” someone into shape or making them so sore they can’t walk the next day; personal training is about making people feel good about themselves. It is about giving them the tools, advice and motivation to power through a workout and feel proud that they just beat the challenge! Working out should never be miserable, it should be fun! You may think I’m crazy for that statement, but it is true! This week, the girls and I toughed it up through a fun and challenging Obstacle Course and not one of us stopped smiling or laughing. I called it “sweat and smiles” because it wasn’t simply working out, it was having fun!  
    I hope they all went home and ate a good meal like I did, because as we know, it takes good food to power a good workout! 
     Makes 10-12 patties
1 can Salmon
½ medium onion, diced
½ jalapeño, diced (optional)
¼ tsp. black pepper
¼ tsp. salt
1 tsp. Italian Seasoning
2 eggs
Couple of dashes of hot sauce (optional)
1 ½ oz. Wheat Thins (about 25 crackers), crushed
    Place entire can of salmon in a medium sized mixing bowl. Remove the spine of the fish with your hands. You can leave in the smaller bones as they are crushed easily and very good nutritionally because of their high Calcium content. Add in onion, jalapeño, and seasonings. Stir well. Add in eggs and hot sauce and mix again. Place skillet on medium heat and spray with nonstick cooking spray. When skillet is hot, sprinkle crushed crackers into salmon mixture and stir well again. Once skillet is warm, use your hands to form salmon mixture into small patties and grill 6-8 minutes, turning once halfway through. Repeat this process until all patties are grilled! Serve alongside vegetables of choice, such as grilled asparagus, sautéed squash, green beans or baked sweet potatoes! If in a pinch for time, simply pop a steamable bag of veggies in the microwave for a quick and healthy dinner!

The cost is only $8.00 a class and it’s a great opportunity to try them out without the commitment of making them all!
