If your family is hesitant to begin eating healthy, serve them this casserole! It is modeled off of a comfort-food favorite but the final product has fewer calories, less fat and more fiber! Even better, this broccoli & cheese casserole is so easy to make! It takes 30 minutes from start to finish and can be made-the night before or frozen for a future meal. Serve this casserole with 4 oz. baked chicken breast for a well-balanced and tasty family dinner!
Makes 4 servings
2 c. whole-grain noodles of choice
1 Tbsp. Olive Oil
2 Tbsp. Finely Chopped Celery
2 Tbsp. whole-grain flour of choice
½ c. low sodium Vegetable Broth
½ c. Skim Milk
1 Tbsp. grated or shredded Parmesan
½ tsp. Salt
¼ tsp. Pepper
2-3 tsp. hot sauce, optional
1 c. shredded Cheddar cheese
2 ½ c. chopped broccoli florets
Preheat oven to 350. Cook noodles according to directions on package. Drain and place in 8 x 8 casserole dish and set aside. In a medium sized pot, heat olive oil over medium heat. Once warm, sauté finely chopped celery in olive oil until tender, about 3 minutes. Add in whole-grain flour and allow to cook through, stirring frequently, about 3 more minutes. Pour in vegetable broth and milk and stir to combine. Once liquid mixture begins to slightly simmer, remove from heat. Stir in Parmesan cheese, seasonings and ¾ cup cheddar cheese, until melted and combined. Pour in broccoli and noodles and mix until coated. Pour entire mixture into 8 x 8 casserole dish. Sprinkle remaining ¼ cup shredded cheddar cheese on top and bake for 25-30 minutes, until cheese is melted and broccoli is tender. Serve & Enjoy!
