Healthy Recipe: Breakfast Cookie Cake

    In case you all haven’t figured it out, I have a MAJOR sweet tooth.  I would choose something sweet over something salty any time of day/week/year/whatever it may be, but I especially crave sweet things in the morning as soon as I wake up or as a night-time snack right before I go to bed.  I adapted my Quick Brownie recipe (if you missed that article, you can find the recipe on my food blog www.racheleatsalot.wordpress.com) to make this healthy Chocolate Chip Oat Cake. It is made of wholesome ingredients and great for Breakfast along with a few pieces of fruit, but it is also light enough to easily be a dessert with a scoop of banana soft serve! Also, since it only takes 5 minutes to make, you can whip it up at any time day or night! 
Makes 1 Chocolate Chip Oat Cake 
1/2 small (6 inch) banana 
2 Tbsp. Nonfat Plain Greek Yogurt 
1/2 tsp. Vanilla Extract 
1/3 cup Oats, Regular or Old Fashioned
1/2 Tbsp. Mini Dark Chocolate Chips
    In a small, microwavable safe bowl, mash banana and Greek yogurt together. Add in Vanilla Extract and stir. Grind Oats in a small food processor or blender. Pour into bowl and mix until combined. Stir in dark chocolate chips. Flatten on bottom of the bowl and microwave 2 1/2 – 3 minutes. Remove from microwave and enjoy a cookie cake for Breakfast! 
    If you avoid dairy for any reason, you could sub Coconut Yogurt or Unsweetened Applesauce for the Greek Yogurt; however, I would recommend trying the Coconut Yogurt first because the yogurt will keep the consistency of the cake moist even though it is “cooked” in the microwave! Enjoy!
