I consider myself very blessed to have grown up in a family that valued food. All of my parents really made it an initiative to make dinner an event. We would get our plates, sit down together and say the blessing before we ate. But, as we all know, life gets busy! There were definitely nights that my parents didn’t have time to whip up some elaborate 3 course dinner, so on those nights, they would revert to something much simpler and something that I always LOVED: Breakfast-for-Dinner! I remember thinking it was such a treat to have my Mom’s pancakes (she would use food coloring to draw on smiley faces on them!), my Step-Dad’s French toast or my Dad & Step-Mom tag-teaming the job of biscuits & Deer Sausage. I am very grateful to say that I inherited the appreciation for mealtime and always do my best to have a sit-down dinner with Joe each night, even if I have to turn to the occasional breakfast-for-dinner meal now & then! But, true-to-form, I usually get carried away trying something new!
Mini Frittata
Serves 2
2 tsp. Olive oil, separated
2-3 Tbsp. Chopped Red Onion
1 clove garlic, minced
4-6 cherry tomatoes, sliced
1 cup fresh spinach leaves, slightly chopped
2 oz. smoked salmon, chopped (optional)
4 eggs
2 Tbsp. Fat Free Cream Cheese, slightly softened
2 Tbsp. Parmesan Cheese
-In a small bowl, whisk eggs and Cream Cheese with a fork until blended. Set aside.
-Heat 1 tsp. Olive Oil in small pan over medium heat until warm. Sauté red onion, garlic and cherry tomatoes until onion is soft (about 1-3 minutes). Remove from pan and stir into egg mixture.
-Heat remaining 1 tsp. Olive oil and add spinach. Sauté spinach until slightly withered (about 1 minute).
-Sprinkled chopped smoked salmon in pan and pour egg mixture on top. Allow to cook about 5 minutes until bottom is set.
-If you feel brave enough, try to flip it in the air! But if you don’t have the desire to waste food and or spend your night cleaning egg mixture off the floor, go the safe route and stick the entire pan in the broiler for about 3-5 minutes until the top is set! Slide frittata onto a plate, sprinkle with parmesan cheese and serve!
This frittata would be perfect for a light brunch and goes well with almost anything! Not to mention it is so good for you! Eggs are high in protein and the salmon is a good source of essential fatty acids. Not to mention the veggies and low-fat dairy whipped in! Plus, this tastes great with anything! I served the frittata with roasted zucchini & sweet potatoes, but it could easily be served with whole wheat toast for a very well-balanced meal!
