One of my biggest struggles with creating recipes is forgetting that other people, who may not mind cooking, would probably much rather be doing something else. If I had the time, I would spend hours in the kitchen trying new recipes, tasting recipes, throwing flour and spices around, baking something, blending something and on and on and on every single day! Then I would have a maid come clean and put away all of the dishes… Haha! That is most every cook’s wish in a dream world, but since this is the real world, I am keeping in mind that we all have other responsibilities! This 3-ingredient, 8 minute recipe is for anyone interested in trying a new, tasty recipe while on a tight schedule.
– 6 Large Wonton Sheets (Egg Roll Wrappers)
– Nonstick Cooking Spray
– Spices of Choice
Preheat oven to 350. Cut large wonton sheets into thirds each way, making 9 squares per sheet. Spray a large, flat baking pan with nonstick cooking spray. Lay wonton pieces on the baking pan. They can be as close as you can get them as long as the edges don’t overlap. Sprinkle with spices of choice: salt & pepper, chili powder, Italian seasoning (LOVED THIS ONE!), garlic powder & black pepper, etc. Spray tops of the chips with another light misting of nonstick cooking spray and place in oven. Bake for 3 minutes. Remove from oven, turn the chips over, sprinkle with additional seasonings, if desired and place back in oven for 2-3 minutes. When they are done, they will slightly bubble and be golden on the edges. Allow to cool on baking sheet for 1 minute (they will crisp even more!) and enjoy your “homemade” chips!
Enjoy these as a snack with salsa or hummus or even as a part of dinner. One of Joe and I’s favorite way to eat these are as loaded nachos! Sprinkle with ¼ cup shredded fiesta cheese and ¼ cup black beans. Microwave for 30-45 seconds, add a few tablespoons of salsa, nonfat plain Greek yogurt and diced avocado for a 15 minute meal. To make these chips even better, 27 chips are 170 kcal, .5 g fat, 0g sat, 10 mg cholesterol, 400 mg sodium, 35 g carbs, 1 g fiber and 7 g protein!
