Healthy Recipe: Simple Shrimp & Couscous Salad

    Did you know that USDA Dietary Guidelines for Americans recommends increasing seafood uptake to at least twice a week? Need an easy idea on how to incorporate seafood into your diet? Do you want it to be tasty? And you probably would like it to come together quickly too, so that you don’t spend all afternoon in the kitchen, because if you’re anything like me, you tend to stay busy! Well I have the perfect dinner for you!
Serves 4
8 oz. Frozen Shrimp, thawed
2 tsp. Olive Oil
2-3 garlic cloves, minced
1 cup Couscous 
4 Tbsp. Pesto Sauce
Grocery Shopping Note: 
Couscous has a unique name, but it is actually only little balls of pasta! It can be found near the rice at most superstores and is very inexpensive. 
Pre-made pesto sauce can be found near the pizza sauces in most superstores, but feel free to make at home if you have a recipe that you love!
1. In a small pot, bring 3/4 cup water until boiling. Stir in 1 cup couscous. Remove from heat and set aside 5 –7 minutes.
2. In a medium sized saucepan, heat olive oil. Add in garlic and sauté until fragrant, 1-2 minutes. Add in the shrimp and cook until pink all the way through. (YUM!)
3. Once the couscous has absorbed all of the water, place in a small mixing bowl along with 4 Tbsp. of Pesto sauce. Mix well.
4. Toss in cooked shrimp & dinner is on the table in 15 minutes flat!
You can serve this with a side salad or toss in a few handfuls of chopped, fresh spinach! This recipe is a great example of how eating healthy can be quick, easy & delicious. Anyone who disagrees, simply serve them this for dinner! Hope you & your family enjoy!
